Applesauce Spice Cake - from Jana
2 cups flour
1 tsp baking soda
2 tsp pumpkin pie spice
1/8 tsp kosher salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup sugar
1/2 cup firmly packed dark brown sugar
2 large eggs
1 cup unsweetened applesauce
1. Place 15 in. piece of parchment paper in bottom of 5 or 6 qt slow cooker letting excess come up sides. In large bowl whisk together flour, soda, salt, and pie spice.
2. Beat butter and sugars until light and fluffy. Beat in eggs one at a time, then applesauce. Mixture will look curdled. Gradually add in dry ingredients until just incorporated.
3. Transfer batter to slow cooker. Cook 2 to 2 1/2 hours on high.
4. Holding parchment paper remove from cooker and place on wire rack. Cool at least 15 minutes. Dust with powdered sugar. Serve warm with ice cream if desired.
