Cucumbers and sunflowers

What's the proper spacing, soil and all that for cucumbers and sunflowers and other good techniques. Also, any good resources for those and growing other food sources in the Arizona Desert would be helpful.

I've already got the sprouts in a couple small pots, but they are getting to big for the pots.
