Good morning to all. I just thought I'd share this with you. Awhile back when I got serious about stocking up on dried goods for long term storage I immediately got myself some new five gallon buckets and went to work sealing them with my food products. A buddy of mine brought to my attention that in order to get some food out I'd have to expose the whole bucket of food to the humid air that we have. We discussed different options. One was to seal the contents in five separate bags so that each would hold about a gallon and I could only open the top one if needed. That seemed easy enough, so I went back through my supplies and sorted things out in this manner. Then my buddy told me that Lowes and Home Depot sold one gallon and quart size paint pails new with lids. I picked up a few of these and washed them thoroughly at set them to dry. They have a enamel liner so you don't have to worry bout rust. I still used a plastic bag for a secondary liner and filled with the dried foods. Place the lid on top and seal with a hammer. For an added measure of safety I pore hot wax into the seal flanges. You can paint the outside if you'd like or label however you want. I like the fact that these are essentially rodent proof. I keep a gallon pail in my truck, my boat and on my atv. They have a variety of vacuum sealed food pouches. Sometimes I'll empty the contents, pick the pouch I want to eat. Mix with water and cook in the same gallon pail. Rinse it out, dry it over the coals, make sure its not hot enough to melt my pouches, pack it all back into the pail and be on my way again.

 l.laduke, have you ever or do you purge your buckets before closing n sealing containers/buckets? Two gases i'm aware of that are nomally used are Nitrogen and Argon. Yeah...sounds odd, but will displace the oxygen and to further food life. I've even seen (i worked in BioMed/R&D for over 23yrs, and learned a lot) dry-ice used to purge 5gal. buckets, before sealing of course. Nitrogen and Argon are cheap gas, but require a gas regulator (things i have lying around the home shop, i don't know about you? lol) and hose lenght. Dry-ice may be your best route as a test. But even a small piece takes some time to burn off/melt before sealing your bucket. Note: Argon gas is also pretty close to Helium. Hope that helps you.
I have heard of the Nitrogen, but not Argon. Where can you by small cans of these? I know that we used to use a Gas to keep wines from going bad, but they were big tanks. Do you know where you can buy either Nitrogen or Argon in smaller containters for people like me? I have Absorbers- but a huge bag, so it's hard to do a couple of containers at a time. Thanks
 VictoriaH., Argon gas is used throughout the welding field and one of the noble gases. We had a nice MIG/TIG combo welder. The tanks are called bottles and need a deposit (to cover the tank/bottle price), after that you buy the gas and trade-out bottles. I think you can get smaller, more portable tanks to? I use Roberts Oxygen for all gas i use. But any welding supply house will work, tell them what you plan to do, they'll help. You will need a good regulator, barb fittings and hose, but this will really save you from wasting gas.

I use silica gel packages that come shipped in our equipment where I work. It is kept separate from the food so there is no risk of poisoning. I am aware of using argon or nitrogen, just haven't used it myself. I don't think using dry ice is a good idea cause it contains more oxygen than normal atmospheric air.

 I pretty sure dry-ice is made from liqiud CO2, or atleast that's what or maker used to produce 1lb blocks. And it will suffocate in a confined space. I feared it more then liqiud Nitrogen.

Yes dry ice is CO2. Any gas can displace oxygen and create a suffocation hazard. For food preservation I don't think it is a good choice cause if you put a chunk in a bucket, when it vaporizes the oxygen content will be nearly 66%, whereas regular air has only 19-21%. I try not to rely on my food stash for more than one year. Every now and then I rotate stuff out.
 So....dry-ice (made with liquid CO2) displaces oxygen, can pose a breathing hazard but it also triples the oxygen level as a by product after vaporizing? And the air (our atmosphere make up is roughly 21% oxygen and 79% nitrogen w/trace amounts of 7 or 8 others gases) in the bucket gets "enriched" with oxygen? I'll need to think that one over, ya got a whole lot going on there...
How do Silica Gel packages work?? Can you use them like absorbers? Where can you get them?
 I don't think silica is a gel? It does one thing in small packit form, if sized correctly and that's to remove/control humidity (RH%) levels. Anything can be an absorber, with pyhsics aside. It's more or less the transfer of energy, temperature, smell, moisture etc. I prefer Alumina beads due to the fact that they can hold 10x more compared to silica and can be regenerated fast. For bulk silica packs you could try this online store "mcmaster-carr" and will have almost anything you may ever need.
